Our cheese is hand sliced and is not processed. Our soups are homemade everyday from scratch- no MSG. We are careful to provide vegetarian options lactose free options and lot fat products. . The bread is home made. Itís a nice old fashioned bread- our special secret recipe. At first we made it here on the premises but later we couldn't keep it in stock. So we made an arrangement with a local bakery and they now make according to my strict standards. How did you manage your finances? For the first few years, it was managing by the seat of your pants when we first started eight years ago we thought we were going to make money quickly- just like everyone else. We would have the loan paid off in two years and we'll be rolling in the dough. In our first year we lost a "1000 shirts". We also lost money in year two and three. To stay afloat we had to borrow some money at 14%. But that's what you do to stay in business. Itís a nickel and dime business; it's not a big money maker. Now our business is profitable and we are meeting our payments. In the last few years we have been able to take a salary out of the business. How did get the courage to sustain yourself through this? You just have to stick it out. You need to put money worries out of your mind. The first couple of years were pretty darn stressful So many places are out of business in the first couple of years and I believe it has a lot to do with under financing. It definitely takes a lot of courage and you don't realize this when you walk into it. I watch Venture regularly and I could relate to a story about a business guy up north who had 15 credit cards on the go because no bank would loan him money. That's how he kept his business going.
