Boston Brisket sells its gray corned beef primarily in New England and in New York's Irish neighborhoods. "There are Irish people who have moved away from the area and still look forward to it for the holiday. We have an Air Force pilot who comes here to buy two boxes to bring back to Texas in an F16, and I get calls from Florida all of the time. Some of my customers buy gray corned beef all year round. In the winter more regular customers return, and around St. Patrick's day I see people who just buy it that one time of the year." Though in a normal week Boston Brisket will sell an average of 20,000 - 30,000 pounds of gray and red corned beef, for St. Patrick's Day production explodes to 800,000 pounds. "We don't use any frozen product for our processes," Epstein boasts, musing further, "There isn't enough of a market of shelf life for gray corned beef to have a major distributor carry it easily. Eventually, this is going to be another product that falls by the wayside."

The cattle of Waterfall Hollow Farm are raised on organically-managed pastures filled with native and naturalized grasses, clovers, and herbs, drinking pure Ozark Mountain spring water. They never receive sub-therapeutic doses of antibiotics, synthetic hormones, animal source feeds, nor feed additives. The cattle move to fresh pasture every day or two during the growing season, which gives them the highest quality forage available and keeps them naturally healthy, happy, and calm. Studies show that beef from pasture-finished cattle, those who stay on the farm and eat fresh green plants all their lives, is not only rich in zinc, B-vitamins, iron, and the other usual nutrients beef is famous for, it is an excellent source of beta carotene and vitamin E, as well as heart-healthy Omega-3 essential fatty acids (EFA's), higher levels of which have recently been linked to decreases in depression and other chronic physical conditions, and contains the most potent naturally-occurring anti-carcinogen currently known, conjugated linoleic acid (CLA), in its most available form. Pasture-finished beef is lower in saturated fats and cholesterol than its confinement-finished cousin. The taste-testers at Organic Style magazine agreed--Waterfall Hollow Farm's beef won their beef taste test, published in the March 2004 issue. Quality of life for our Beefmaster cattle as well as the quality of our beef is uppermost in our minds, that's why they graze organic pastures and drink pure spring water. Here's what we do to further ensure their health and well-being: above all, we treat them humanely and with honest affection; they get all their immunizations, which are encouraged in organic production; we deworm the calves at weaning, around nine months of age, with an effective product allowed in organic dairy cattle. We feed a small amount of grain to them during the cold wet winters, as well. The steers are usually 2 to 3 years old at harvest (summer - fall) after a long spell of fresh green grazing, so the steaks are super-tender and richly flavorful. Our cattle never receive sub-therapeutic doses of antibiotics nor synthetic hormones, animal-source feeds, medicated feed additives, and are never confined. We give them one or two full years longer than conventional beef producers; cattle just grow more slowly in their native environment than when they're pushed. Waterfall Naturalsä Pasture-Finished Beef is an Arkansas product. Our USDA-inspected processor selects the most tender cuts for our steaks and roasts. The beef is packed in clear heavy poly with our custom USDA-approved label, then is vacuum-sealed so the contents can be seen at a glance and the bags cut open with scissors. All beef is dry-aged and expertly hand-cut, and the hand-packaged beef is frozen immediately to ensure the highest quality. Each package contains 100% beef. Vale Farms was started in 1975 by Charlotte and Michael Ruechel, when they immigrated to Canada from Germany. Since then, the farm has slowly grown, so has the family as they had 4 children (Julius, Emily, Charles and Lorna). In 1999 we began to transition into being Certified Organic and began to direct market our meats at farmers' markets and at one health food store in Vernon (Nature's Fare). Today, we sell our meats to 10 stores throughout the Okanagan, as well as one winery restaurant, and we attend 3 farmers' markets per week in the summer. While we originally started with just started with beef, we now raise hair sheep (Dorper and Katahdin), grow garlic and have a small orchard of Sea Buckthorn berry bushes! We now offer 5 different pasture-raised meats: chicken, turkey, beef, lamb, and pork. The fresh chickens and turkeys are sold on a pre-order basis and frozen birds are sold 'as available' year round.
