We purchase the best animals we can find in the region. Most often, this means we purchase directly from the farmers. All of the animals we use have been grain finished, and are slaughtered at the perfect age. That is four to six months for lambs, and eight to ten months for goats. They are processed under USDA inspection, and cut by our experienced staff to the highest standards.
Our primary customers are chefs at many of the region,s finest restaurants. These chefs will not compromise on quality, freshness, flavor, or cut, and we think you shouldn,t have to either. When we put ,Fresh, in our name, we were serious about it. Unless specifically noted, none of our meat has ever been frozen (at times we will run frozen products at discount prices). In addition, our meat is vacuum packaged to protect freshness, giving our cuts a 21 day refrigerated shelf life.

Our harvest facility is located in Sioux Center, IA. With significant capital improvements over the past five years, we now have a daily harvest capacity of nearly 4,000 head per day. Our fabrication facility is located in Sioux City, IA.
Our Sioux City facility is located just a block from I-29 in Sioux City, IA. I-90 is about 80 miles North and I-80 is about 80 miles South of our plant. Our close proximity to these major interstates mean that we can assist with all your transportation needs. In the Spring of 2007, we completed construction of a new addition onto our fabrication facility to add more fabrication capacity.
